My Sunday Morning Routine And Easy To Make Protein Bars

While most people use Sunday morning to have a much-needed lie-in or recover from a hangover or have a lie in because they have a hangover, I much prefer to get up early, put my trainers on and head out for a run. The best part of the day (in my humble opinion), is the morning. It’s full of new possibilities and I find if my morning starts off well, the rest of the day follows suit. Also, there’s something I find really satisfying about getting up on a Sunday morning while the rest of my neighbourhood is still asleep.

After our morning run, we normally prepare food for the week. We make a batch of vegan lentil burgers (how cliché), followed by no bake protein bars which come in handy after a session at the gym.

The recipe for the protein bars is taken from Oh She Glows, and they are delicious! They’re quick and easy to make and then you just store them in the freezer.

Ingredients:

1.5 cups (150g) rolled oats, blended as a flour

½ cup (50g) vegan protein powder (we use Pulsin rice protein)

½ cup (15g) Rice Krispies

¼ (2g) tsp of salt

½ cup (140g) smooth peanut butter

½ cup (125ml) maple syrup

1 tsp vanilla extract

1 tbl flax oil

2 tbl almond milk

3 tbl (35g) dark chocolate chips

Directions:

Mix all the dry ingredients together in a bowl and then add the wet ingredients and mix again. Easy peasy! Line an 8” square tin with grease proof paper and fill it with the mixture. Spread it out until it’s nice and even then put it into the freezer for 10-15 minutes. While it’s setting, melt your chocolate chips and give them a stir. Grab your mixture from the freezer and cut into slices, drizzle the melted chocolate over the bars and you’re done! Store them in an airtight container and pop them back into the freezer.

We like to add the flax oil and almond milk because without them we find the mixture a bit too dry to spread. This is the recipe we find works for us, but you can find the original ingredients and alternatives over on the Oh She Glows website.

If we’re at home, we remove individual bars about 5 minutes before we want to eat them. Ian also takes one to work each day in a resealable bag and doesn’t have any problems eating it later in the day.
